Course Outline
This course has now replaced the Basic Food Hygiene Certificate
and is suitable for anyone working in a catering, manufacturing or
retail setting where food is prepared, cooked and handled.
There is no requirement to have completed the
CIEH Level 1 Award in Food Safety in Catering before attending this
course.
The course begins at 9.00am and the exam
starts at 5.00pm, candidates are allowed up to 1 hour to complete
the multiple choice examination but are free to leave once they
have completed this. Most candidates finish no later
than 5.30pm. During the day there will be refreshment breaks
and a break for lunch.
The course syllabus includes:
- Introduction to Food Safety
- The Law
- Food safety hazards
- Taking temperatures
- Refrigeration, chilling and cold holding of
foods
- Cooking, hot holding and reheating of
foods
- Food handlers
- Principles of safe food storage
- Cleaning
- Food premises and equipment
Please note that to be able to complete this
course it is necessary to have a good understanding of English.

All candidates for this course are required produce photographic
identification on the day. Failure to do this may result in
the candidate being unable to take the exam.
Costs
The cost of the course is currently £45 per person.

those who successfully complete the course and exam).
